Something a little different, which is really delicious is:
Blintze Cassarole
It tastes just like Sweet Cheese Blintzes. But you don't have to stand there frying all day.
Let me know if you want the recipe.
(My Mom made this for the Succos Brunch and it was a big hit.)

Homemade, gourmet pizzas with lots of different choices for toppings! I recently made a little party at my house and served three pizzas, each one with different topping on each side. (So six topping choices in all.) It looked beatutiful to serve with all the colors on one table. Goes great with a few big salads and latkes!

I made them round.
The toppings:
-Plain, on two pizzas
-Mushroom/Onion
-Yellow/Red Pepper
-Black Olives
-Spinach/Tomato/Feta Cheese

1 pound creamed cottage cheese
1 pound farmers cheese, shredded
2 eggs
Pinch of salt
1/4 to 1/2 cup granulated sugar
1/2 teaspoon vanilla extract
Juice of 1 lemon
1 cup butter, melted and cooled slightly
2 eggs
1/4 cup milk
3 teaspoon baking powder
1/2 cup sugar
1 cup flour
1 teaspoon vanilla extract
Sugar
Cinnamon
1 large can blueberry pie filling
1/2 teaspoon grated lemon peel
Preheat oven to 300 degrees F.
In large bowl, combine fist 7 ingredients, blending well and set aside.
Grease a 2-quart long baking dish.
In a large bowl, combine the next 7 ingredients until blended. Pour 1/2 of the mixture into the prepared pan. Pour all of the first mixture on top of the batter in the pan and top with the other 1/2 of remaining batter, being careful not to mix together. Sprinkle with sugar and cinnamon and bake for 45 to 60 minutes.
Warm the blueberry filling and lemon peel together and pour over slices of the blintz.
Or substitute the blueberry filling with cherry pie filling or... omit the lemon peel and pie filling and use chocolate syrup....

what is original for me, may be typical for you and vice versa
here are some dairy dishes that I like:
stuffed shells, fettucini alfredo, spinach lasagna, shells with cream/vegetables sauce (my absolute favorite), quiches (mushroom/onion, spinach, broccoli), tuna casserole, ...
just to name a few

I just use regular cottage cheese. You can substitute ricotta for the farmers cheese, or just double the cottage cheese.
Don't remember offhand where I got the recipe from.

OK.... Here's the BLINTZ CASSEROLE Recipe:
Batter
1 cup flour
1/2 cup sugar
1 tablespoon baking powder
1 cup melted butter
1/2 cup milk
1 teaspoon vanilla
2 eggs beaten
salt
Place 3/4 batter on bottom of pan and save the rest for the top.
Filling
450 grams Cream-Cheese or Sour Cream
2 cups cottage
3/4 cups sugar
2 beaten eggs
1 teaspoon vanilla
pour in batter and put remaining batter on top and bake till brown and set.
My Aunt sent my Mom this recipe. It's an all-time-favorite at all our family gathering!!!
