So what foods can be used for "gourd" as a symbolic food for Rosh Hashana? I'm just not sure what is considered a gourd. Can I use pumpkin? I have some canned pumpkin I can make something with. I think I read somewhere some people use butternut squash?

A gord is part of the squash family, I would assume you could substitute a squash.

We use butternut squash -- winter squashes are gourds.

You can use carrots - the yehi ratzon for kara also mentions gezar dineinu, which is similar to the Hebrew for gezer = carrots.

In the past I used acorn or buttercup squashes.

Yes, pumpkin is a gourd.

I'm using canned pumpkin to make a pumpkin pie/kugel.
