I see people buying yellow squash all the time and wonder what they do with it. Any ideas?

You can treat yellow squash the same way you treat zucchini, and I often use both together. My favorite method is to roast it. I slice the squash lengthwise into quarters, then cut into bite-size chunks. I line a baking sheet with parchment paper and lay the squash pieces out yellow side down. I spray with PAM and season. Lately I've been using salt, pepper, and paprika (DD's current favorite spice), but you can use whatever your family enjoys. Roast in preheated oven at 400. The timing depends on the size of the pieces you cut. Start checking at 15 min. Remove from oven when squash is soft. This is best eaten fresh. It gets a little soggy if you reheat it.
