Apple Crisp / crumble
4 C. potato starch
2 eggs
1 ½ C. sugar
1 C. oil
Pinch of salt
2 tsp. vanilla sugar (optional)
4 tsp. baking powder (optional)
Mix until crumbly. Do not over mix!
Filling:
8-10 apples (peeled and sliced)
¾ C. sugar
1 ½ tsp. cinnamon
2 T. lemon juice
½ C. water
Place ¾ of crumbs on the bottom of two 9” round pans. Divide filling between both pans. Sprinkle the rest of crumbs on top. Bake for 1 hour at 350º. |
I made these in muffins. I got 24 muffins, but stayed with lots of extra crumble. Next time I'll either make much thicker crusts or I'll half the crumb recipe/double the filling. I baked them for the full hour.

Would you be able to post a pic of the recipe?
