in 1 bowl mix:
1/2 cup canola oil
1/4 cup honey
1 teaspoon salt
2 eggs
1 cup lukewarm water
in bowl # 2 mix:
25 grams dry yeast
3 cups challah flour
1 cup whole wheat or spelt flour
1/2-3/4 cup granola
combine both bowls
cover dough with oil.towel-for 45 min until doubles itself
egg brush
sptinkle sunflower seeds
bake for 25 minutes on 350

Your challahs sound good!
I also prefer challahs that aren't made with just white flour.
I couldn't fall back asleep this morning, so I made challahs and my house still smells SO good from them! I really want to try a piece - I'm curious to see how they came out.
