How far back do I need to keep utility bills for (gas, electric, phone, health insurance billings, and bituach leumi statements). I would think I would keep the past years so I can compare how much more/less we've spent but is there a reason to keep for further back?

Forever! One of the utility companies in Israel called me after 8 years to pay a bill that was already paid. & that's not an uncommon story for bituach leumi either.
It's also aproof of living in a certain residence,work and living with spouse.
