"Baked" stuffed peppers

(You have to preboil the peppers in a lot of stuffed peppers recipes, but not this one! It's also faster than making stuffed cabbage.)

You need:
4 - 6 big peppers, any color, halved, deseeded, and membranes removed
tomato sauce - can or jar - any kind (the recipe called for four but I needed more)

Ingredients for stuffing:
1 lg. ground beef
1 cup cooked rice (instant or leftover is prob. fine, I wonder how other grains would taste - heck, I'd like to try using raw rice, but . . . . )
1 minced pepper, any color
1 minced onion
2 minced garlic cloves
1 T Italian seasoning
1 beaten egg
1/8 cup breadcrumbs, any kind
salt and pepper, to taste

Mix your ingredients in medium sized bowl and stuff peppers. (You can sautee any leftovers stuffing for another meal and call it Dirty Rice!)

You can even freeze your stuffed peppers at this point!

Place in shallow baking dish and cover with tomato sauce. Cover and bake at 350 for about 90 minutes. (I didn't have that long to make dinner, so I baked them 45 minutes in the AM and then again for another 45 minutes when I came home from work.)

Occasionally baste with tomato sauce, if you can. After the 90 minutes, the recipe said to bake another 20 minutes, covered with pareve cheese, but we just ate them !

Serve with bread and salad, if that's your pleasure, and eat and enjoy!
