how much should a family of 3 make a month living in NY? (2 adults a a 7 month old)

It doesn't really work like that. Look at how much you make and budget accordingly. If you don't make enough to cover your expenses, either find a way to make more or find a way to spend less.
There's no one single amount you "should" be making. It depends on a thousand different things, and it differs from family to family, location to location.

A basic lesson you need to consider is how income is generated. Outside of government, it is generated by providing value to someone else. A checker a Walmart generates a minimal value because he or she is easily replaced. An engineer that invents a new technology that the entire world wants because it provides them value, think Bill Gates, will generate tremendous income.
Be honest about your value in the job market and seek to meet that value and then exceed that value by picking up new skills and becoming indispensable.
