Homemade Pizza
Bean and veggie tacos
Mac and Cheese
Shakshuka with whitebeans
Tofu Stirfy

If fish is a reasonable price I may serve it on the side of a pasta dish for anyone who wants.

I'm trying to avoid wheat and dairy, so this is going to be tricky. I figure I'll do a gluten free, vegan thing and see how it goes. Fortunately, DH is out of town, so I don't have to worry about him being so picky.

Lots of salads, and asian style foods are planned. Google and Pinterest are my friends!

I get the dagim frozen tilapia or sole fillets.. cheaper then fresh and tastes delicious!

We try not to have too much dairy or too many grains/legumes in general (paleo-ish, I guess), so this is our menu. Haven't decided on the vegetables for each evening but that's nothing unusual.

Thursday: Mixed vegetable fritatta and salad
Sunday: Tapioca battered white fish, homemade sweet potato fries and vegetables
Monday: Shakshuka with plenty of peppers and onions
Tuesday: Tuna steak with mashed potatoes and green beans
Wednesday: Salmon stiry fry (eggplant, peppers, onions, zucchini, sesame)
Thursday: Scrambled eggs with cherry tomatoes and onions, salad
Sunday (Break fast): Toast, vegetable soup

Tuesday: black bean burgers and fixins, French fries
Wednesday: spinach pasta bake, Caesar salad
Thursday: sushi, avocado salad, tortilla crisps
Shalosh Seudos: salmon, pasta salad, cheese pancakes, chopped salad, watermelon
Sunday evening: tilapia, leafy salad, baby red potatoes

Hey! No real recipes but here are the basics.
Tuna steaks: dredge in seasoning and sear 1 1/2 minutes on each side.
Fingerling potatoes: toss with oil and seasoning and roast at 425 for 25-35 minutes
Cheese tortellini: prepare tortellini according to package directions (sorry, I cheat and buy frozen), then make a sauce with tomato sauce, seasoning, milk, cheese and stir together to serve
Crostini: make an herb oil by adding fresh crushed garlic and herbs to olive oil, brush on sliced French bread, season with salt and pepper and toast at 350 until golden, about 15-20 minutes.
Black bean burgers: drain and rinse canned black beans. Add eggs and breadcrumbs and process in food processor. Add seasoning and taste as you go. Form into balls then flatten neatly on cookie sheet. Bake at 350 for about 20-25 minutes, flipping halfway through. Serve on buns with condiments and layered with sliced vegetables.
