I add mayo, scallions, celery, salt, pepper,
and if it is going to be a whole meal in itself then I add diced veg. like tomatoes, cucumbers, lettuce, and sometimes olives.

I put olive oil instead of mayonnaise - also good! Much lighter taste. Also did that b/c one of my guests was not able to have mayonnaise.

Ditto, plus miracle whip which has that tangy taste to it. Lemon juice just a tad. Salt.
For stuffed devils eggs I do the same but leave the whites to stuff w/h the yellow and mixture w/h green seedless pepper olives and yep it's gone as soon as fish is served

I process the eggs in the food processor- that makes a big difference. in the eggs I put mayo, salt, pepper, onion powder, and some fat free italian dressing.
