"New" places to visit in Israel

We have an upcoming trip to visit family in Israel later this month and would like to spend time "touring" as well. I've spent my college years working with American high school kids touring israel for 4 summers, and have toured around a lot privately as well. My husband lived in Israel for high school and college so he's been to many places also
We'd like to travel around again, but don't know exactly where. Any new, different, suggestions of places to visit?

The detainment camp at Atlit is about 10 years old. There is an excellent tour including a audio visual show in a refugee boat. Really interesting.

an aquarium opened in jerusalem. it is tours only so you need to book in advance.
the Palmach Museum in Tel Aviv is amazing (also tours need to be booked in advance).
new sound and light show in kfar etzion museum is supposed to excellent too.

I second this. Really interesting. You could combine it with dinner/stroll in Zichron or Caesaria for a really nice day.

Other random ideas:

MUSEUMS:

- The Begin Museum is very good (you need reservations).
- Tikotin Japanese Art Museum (Haifa)
- Nacharayim - first power plant and historical tour (sounds boring but it's not)

ACTIVITIES
- Machana Yehudah tasting tours (not sure about kashrut options, be cautious)
- Segway tours of Jerusalem
- Nachlaot scavenger hunts
- Astronomy tours in Negev
- Wineries

HIKES/OUTDOORS (not new sites, but slightly off the main tourist routes)
- Ein Avdat
- Beit Shearim

Are you a museum person? The Tel Aviv museum is wonderful. The Israel Museum always has great exhibits and a new-ish wing of modern art that is exceptional. The artist colony at Ein Hod is a fun excursion. If you’ve usually been in summer, have you done a night Jeep tour of Mizpe Ramon?
There are new excavations in Jerusalem.
Look at Society for the Presetvation of Nature in Israel (SPNI) tours.

There's a lot of cool stuff up north. Have you been to Gan Guru near Tiveria? Nimrod's Fortress? Har Bental? Olive oil tour in Katzrin? Maybe a new wine tour? Also Eretz Bereishit near Yerushalayim.
