As title says..
Not looking to make challa kugel, more calories we dont need.
Croutons..always a debate if they need hamotzi. Never get eaten
Fried-kids wont touch it
Ground to breadcrumbs- dont have a mixer to do such work!
So what do u do with ur leftovers?

You can soak it and use as a filler in meatballs. Make cheese strata. Leave it near the tree for birds. Or roll it up in a napkin and dispose of it.

If you have enough it makes very good bread pudding.

I freeze it and before making potato kugel I toast the challah and put in the food processor. This way I dont take it out twice and it doesn't need to be washed in between. I don't use crumbs much but it's great to have ready and it's free!

Growing up, we had a motzei-Shabbos French toast melava malka.
Yum!

Keep in mind that bread that was open on the table during a meat meal may not be eaten with dairy even though no meat touched it.

Oh right, I always seem to forget that meat meals are a thing ;p
I guess bread pudding is mostly out unless you have a whole loaf that you never served. Maybe some recipes don't need milk? Not sure.

That's why I take the challa off the table before serving the main course.
I'll chime in with the French toast chorus. Great Sunday supper. Of course there's always the old standby, use it for the kids' school sandwiches. (Has to be done with discrimination: I know exactly which child will munch away blithely and which will turn their nose up in disdain.)
