Taking a few days to go away with my husband, but for logistical reasons need to take my two year old. Anyone did both and can advise me what make more sense?

I did both. There’s no difference as long as you go to a place with kosher food. (Scottsdale, Phoenix) (Miami, Boca) and there’s plenty to do in both places. Arizona is a much longer plane ride. If I was doing on vacation with my kids now, I would choose Arizona.

Says the mom who has travelled internationally with her 3 year old 4 times.

I much prefer AZ to FL. That said, if I was in your shoes, traveling with a little one and for only a few days, I'd opt for FL for the practical reasons others have mentioned.

Does weather make a difference to you? Florida is extremely humid whereas Arizona is arid. Florida has a humidity factor in the range of 70-80% this time of year. Arizona is near the 50% range.
For some of us, that is a major factor in decision-making. Not sure if it is to you or not.
Also, Florida, as mentioned, has more kosher restaurants and "in-town" flavor. Arizona is more quaint, a laid-back, homey state. Florida is more commercial, more "with it."
If it were me, I'd prefer to go to Arizona. But honestly, if you are open to other options I'd recommend Colorado, which is gorgeous year round or Seattle, which is just one of my favorite places on earth, home to towering trees, mild weather, rushing falls, fabulous hiking and so many fascinating outings, such as whale-watching, tours at the Boeing factory, Pike's Place Fish Market, the Space Needle, etc.
But those are all much longer flights of course.
And there is also Palm Springs, which is awesome.
