Corn beef conundrum

I’m making corn beef to take to a joint Seuda
First time making 2 in the same pot
Each about 5 lbs
How long to boil?
Can I overlook or is this something the longer the better

I think (though never done it) that it will just take longer to boil with 2 in the pot, but once the water is boiling they should cook just as quickly. About 1hr-45 min to 2 hours should be enough to cook. it doesn't have to be super exact, but if you let it cook a lot longer they will shrink more in my experience.

Or will it just get softer

It will get softer but can break apart like pulled beef if overcooked.

shouldnt be a problem cooking two in the same pot as long as theres enough space and water. low and slow is key for soft and tender meat.
the only way you'd overcook it is if you boiled them on a temp that was too high, that would make them tough and chewy.
cooking them in a crockpot on low is also a great method.

I put the corn beef in a crock pot filled with water on low the night before.
Drain slice and serve at seuda
It’s delicious and easy no mess no sauce etc

Started boiling already
I usually do it this way but never so much at one time

A butcher told me a much better and easier way to cook these. Cover with water and bake, covered in a 350 oven for 3 hours. It comes out great.
