What can I do? I can't return it so don't suggest that. It's a nice cut, looks good on but is crazy staticy/fly away. Part of it is winter, but really think it will be a problem much of the year.
Any advice besides spraying hair shine spray. Which does help, but I can't do that every hour. (Plus, can I even do that on shabbos?...) Ahh!

Use a bounce sheet (dryer sheet) and gently glide across the wig

I once saw online to rub a dryer sheet on a brush and then poke the bristles through the dryer sheet, then brush sheitel with that brush.
It helped my sheitel

I have anti static spray and it says one of its uses is for fly away hair. I got it in the supermarket in the laundry section.

Agree with using a dryer sheet. Just make sure it is unscented!

when I had a staticy wig, I would keep a bounce sheet in my coat pocket

you can also put a dryer sheet on the sheitel head under the cap of your sheitel, this will additionally help with sweat in the summer also.
