Nuts. Trail mix. Granola. Egg free potato kugel. Snack bags and chips. Fruits. Veggies. Sliced eggs. Yogurt. Cheese snack. Chocolate. Cold cuts.

What specifically are you looking for?

Its for toddlers - granola is not for Pesach and it needs to be egg free... (no sliced eggs Smile )

You can make homemade coconut granola for pesach.

Potato chips? You can even make your own pretty easily and make other root veggie chips as well if your kids will go for that.

We pack a lot of fruit and cheese and chocolate and macaroons for chol hamoed trips.

Egg Free Potato Kugel from Mommy3.5. You can make individual cups so it's easy to take out, reheat and serve.
Flour conversion is about 7 tablespoons potato starch.

Coconut Granola
1 cup pecans, chopped
1 cup raw cashews, chopped
1 cup raw slivered almonds
1 cup unsweetened shredded coconut
1/3 cup oil
1/3 cup honey
1 teaspoon pure vanilla extract
1 teaspoon cinnamon
1/4 teaspoon kosher salt
1 cup craisins and/or chocolate chips, optional

Preheat oven to 300 F.
Combine all ingredients, except for the optional dried cranberries and choc chips, until well mixed. Spread out evenly on a baking sheet.
Bake uncovered for 30 minutes, mixing every 10 minutes. Watch it to make sure it doesn’t burn and bakes evenly.
Cool for 10 minutes to harden. Break into clumps.
Stir in cranberries and choc chips once completely cooled, if using.

If you like less coconut, just decrease.

One Bowl Vegan Gluten-Free Vanilla Cake
1 2/3 cup coconut or almond milk
1 1/2 tsp lemon juice
1/3 cup oil
1 tsp pure vanilla extract
3 1/4 cups almond flour
1 1/3 cup potato starch
1 1/3 cup sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt (optional)

Preheat oven to 350 degrees F (176 C) and lightly grease a 9x13 pan with oil and dust with starch. Shake out excess and set aside.
Mix milk and lemon and let set a few minutes until it sours. Then add oil and vanilla. Whisk to combine.
Add dry ingredients to a large mixing bowl and whisk to combine. Then add wet ingredients to the dry ingredients and mix until well incorporated and no large lumps remain. The batter should be thick but pourable. Add more almond flour if too wet or dairy-free milk if too thick.
Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean and the edges and surface appear golden brown.
Store cake covered at room temperature for 2-3 days or in the refrigerator for 3-4 days.
Frost with coconut whipped cream and berries.

This is on the thread with egg free potatoe kugel. I adapted it and made for the past two years, my kids actually prefer it to my egg-filled one!

Egg free Potato Kugel

3 lb potatoes
1 onion
1 zucchini (I’ve done successfully with acorn squash and yellow squash too) (peeled cuz my kids didn’t like the green)

1/2- 3/4 cup water
1/2 cup oil
2 t salt

Blend the onion and squash and potatoes.
Mix in the oil, water and salt.

Pour mixture into a parchment paper deep baking pan.

Bake 350 uncovered for 2 1/2 - 3 hrs.

When we were off eggs I used to make a flax mixture 1cup ground flax 3 cups water. Stays in fridge at least a week. 1/4 cup of mixture subs each egg.

Home-made applesauce. I cut the apples into small pieces and cook with brown sugar.
My kids love it in a cup/small bowl for a snack.
