I make a couple of similar salads.
One is romaine lettuce, scallions, cherry tomatoes and chermon/feta cheese. The second is a standard Israeli salad, with chermon/feta cheese crumbled in.

Greek salad (w/feta)
Pasta salad with sundried tomatoes, artichokes, Parmesan, pine nuts
Caesar salad with romaine lettuce, croutons, shaved Parmesan, lemon juice, olive oil, garlic, ground black pepper.

For a low fat dressing, mix some garlic powder into low fat/fat free cottage cheese.

Greek yogurt and herb salad dressings. Just Google, there are tons of recipes out there. It's especially good if you can find some heirloom tomatoes. They are made for each other.
Creamy parmesan pesto potato salad or pasta salad is good, too.

Fusili pasta, pesto, cherry tomatoes, sauteed mushrooms, chunks of salty white cheese, toasted pine nuts
Salad Nicoise - you can add some crumbled cheese
Caprese salad

lettuce. purple onion. green and black sliced olives. cherry tomatoes. avocado slices. lots of cubed feta cheese. honey dijon salad dressing. (I purchase dressing ready made.) really good and easy.

We love greek salad.
1/4 cup lemon juice
1/4 cup oil
2 garlic cloves, crushed
1 tsp oregano
1 tsp kosher salt (or more to taste depending on how salty your feta cheese is and how much feta you use)
1/4 teaspoon black pepper

If you want a pareve salad to go with a milchig meal, I find a strawberry mango salad light and refreshing.

would also love the haloumi salad. just did an ima search yesterday for the recipe and couldn't find any.
I had it a couple times in Cafe Venezia and would love to make it myself.

I often do a Euro salad (Euro mix, mango, strawberry, honey glazed almonds)
Then I just cube in some pieces milk chocolate. It rly enhances the flavor
