Does anyone have a recipe for a classic lokshen kugel? (Not one with apples) just basic eggs, oil, noodles, sugar?
I remember one from I think either the heimishe cookbook or spice and spirit

Balabustes choice #1 has a basic beginners kugel. My family likes it very much.

Spice and Spirit has a great one. I believe it does call for grated apple, but I omit it. It's the best sweet lukshen kugel I've tasted. It also has a cornflake crumb topping. Let me know if you would like the recipe.

Luckshen kugel

cook 1 pkg egg noodles (12 oz) with a bit of salt. Drain.
mix together:
3 eggs xtra lg
1/3 c. oil
1 c. sugar
vanilla

Add noodles. Pour in greased 9 x 13. sprinkle with cinnamon (optional).
Bake 350 about 1 hr.

Enjoy!

Someone gave me a recipe with no oil in it.
Did she omit this essential ingredient by mistake 😬😬😵‍💫😳

I just worked over An hour on this recipe

The following recipe is so well-liked by our kids that it lives in handwritten copy form on our fridge.

Mock Yerushalmi kugel

4 1/2 cups water

1/2 c. brown sugar (preferably dark)

1/2 c. white sugar

1+ t. salt

1/8 t pepper (or to taste)

1/3 c. oil

12 oz thin noodles

3 beaten eggs.

Bring 4.5 cups of water to boil in a pot. shut off fire. Add sugars, salt and pepper. stir.
Add oil. Add noodles (UNCOOKED). Add 3 beaten eggs. Stir rapidly.

Pour into greased 9 x 13 pan and bake at 350 for an hour.

Thank you for the above recipe
BUT
I wasn’t referring to yerushalmi kugel (which I’ve made dozens of times)

I ate a peice of yummy lokshen kugel & asked the hostess for recipe. Which she said off the top of her head & I wrote down as she said it.
I then realized it had no oil after wards but since I never made plain old fashioned lokshen kugel before I thought she knew what she’s talking about.

This is her recipe:
4 eggs
Pkg of lokshen
1 T vanilla sugar
Jar of applesauce
1/2 c sugar
1/2 t salt

Cinnamon & sugar mixed together & sprinkle on top.

Applesauce is used as an oil substitute. I can't speak to this exact recipe, but it makes sense.

I poked holes in it with a toothpick when it was almost done & added a bit of oil & cooked for another 10 min. I did that b/c it really looked weird (for lack of a better word) & not edible.
We’ll see….

I can’t speak to it looking weird, but the recipe sounds right. Applesauce would be instead of oil.

A whole jar? That doesn’t make sense for one bag of Lukshen.
(I once had a recipe using 3/4 cup applesauce and also soy milk. No oil and it was very good.)

You’re right. Maybe the woman who gave her the recipe uses a smaller jar.
