tonight we had lasagna and aubergine parmesan.

Other nights I guess will be salmon, tuna patties, lentil curry, pizza, falafel, wraps with refried beans and maybe fake meat.

Easy veg soup I often make - 2 onions, chopped. Bags of frozen carrots, butternut squash, any other veggies you want to add like leek or courgettes or sweet potatoes. saute onions, add veggies and saute a bit. Cover with water and bit of soup mix. add a cup or so of red lentils. cook for about an hour. You can add some fresh ginger and garlic if you want. Blend.

Of course when I make veg soup they dont want mine anymore. Snobs. But they love sweet potato soup

I cancelled supper and went to bed with a migraine. They can update me tomorrow on the menu. There's always cereal and milk. Or eggs. Or the freezer. No one is going to starve.

Last night we had a baked potato bar with various toppings.

Tonight it's breakfast for dinner. DH is making pancakes and I have melon and cottage cheese to go with it.

Next week I'm making doubles so I don't have to cook every night. Sunday/Tuesday will be vegetarian chili with cornbread and Monday/Wednesday will be lasagna with salad. Thursday the kids will either have leftovers or frozen pizza and DH and I will break our fasts on soup from the freezer and toast.

We have dairy,eggs and nut allergys here so can relate.Its challenging
We are having Spinach Lasagna made with Daiya cheese and sweet potato fries.
Can you use Daiya cheese?its made with chickpea protien now instead of pea protien.
Can you make fish? There are lots of variety in the fish realm
