My 6 month old baby has dark grey eyes - a color I’ve never seen before. Was wondering if it’s possible they’ll stay this color or will they turn brown (or green or blue)?

Yes gray is a common eye color but there is no way to tell your child's permanent eye color at her age....

Possibly, or some variation of blue, green, hazel or gray. Too early to tell.

Dark grey turns into brown.

Eye color is a “melanin spectrum” so to say. Meaning, the lightest blue eyes have the least amount of melanin, and the darkest black have the most amount of melanin in them. Babies are born with less melanin than they will have once grown (same with skin color. Many babies of color look Caucasian).
So if the eyes are dark grey, they will eventually turn brown. But they can look not-brown for a year.
If a baby will have blue eyes, it’s a lighter grey with a brightness to them, and the blue color is a little more obvious by 2 weeks.
Eyes sway to the grey-side or green-side depending on how much sediment there is in the iris. For example, I had blue eyes until I was 20. 5 years later my eyes are grey.

My eyes are greyish. I used to think they were more of a blue, but they seem to have gotten more grey (maybe just darker) with age. They are a really pretty turquoise when I cry, but the rest of my face is red, so maybe it's not the best look.

my eyes are grey/green/blue depending on the day... haven't yet worked out if it's any specific moods/weathers/lights that do it, as other people have suggested over the years

My DD5 had the brightest light grey/ blue eyes toll about 6 month. Everyone commented on those big blue eyes. Well, today her eyes are dark brown!
2 of my kids had very dark grey eyes that seemed to be turning brown, but slowly got lighter, and now they are blue. Go figure!

I know all of this information but I haven't seen dark gray always turn brown. My siblings all have dark gray eyes as babies, some have brown, some have blue eyes later and I've seen it in other kids as well.

Eye colors aren't as permanent as we think. There are a number of adults whose eye color changes from day to day.
