Most people I know remove the dips, because otherwise there would be no room on the table for the serving platters.
Unless everyone is getting pre-plated food, the table just gets too crowded.

They go off. Or they get gross.
We serve dips and salatim in glassware that doubles for storing and serving. So much easier.

They come off after the fish before the soup/main course. I want it to stay parve because we eat them during the week sometimes.

Served with the fish course, in dip holders, and taken off with the fish.
Besides that it takes up space, too much challa will be eaten...just another dip and then another. Also we don't like those dips with chicken/meat so yea, I take off when done, after fish.

In general they stay on throughout the whole meal. But thank you to the ima who said that the concern may be that fish particles may get in the dip, and it would be an issue to serve with the meat course. Something to consider. I never thought of that. Thanks!

Depends on which dish. We like chumus and techina with certain dishes so that stays. My husband likes spicy so that stays on too !
