My kids like it sliced thinly and will eat it like chips.
You can cube it and fry it with eggs and/or potatoes.
Cube it and use in a deli salad with lettuce, tomato and a mustard based dressing.

You can bake an apricot glazed salami.
Make a drunken hasselback salami.
Dice up potato, toss with oil, salt, pepper, paprika. Roast. Halfway through add sliced or cubed salami, and continue roasting.
Slice thin and layer around muffin tins to form a flower "crust". Fill with kugel batter or beaten eggs with veggies and bake.
