Why didn’t anybody say allow to rise for at least an hour!
After it’s defrosted if it’s still cold it won’t rise. After it’s defrosted then it needs to rise for at least an hour! I find that it needs to sit out 3-4 hour for it to double in size. Put it into a much larger challa pan or on a cookie sheet.
