My mother got a recipe from someone that had sour cream on meat so she uses mayonnaise instead. I think it depends on the recipe.

the sour cream is for a chocolate cake recipe and the heavy cream is for the ganoche (no idea how to spell it)

You can use soymilk with 1 Tbs. lemon juice or vinegar added to it for a sour cream substitute in baking recipes. This is also a great parve substitute for recipes calling for buttermilk.
