I was thinking of bumping up a thread from 2007, but I decided to make a new one for healthy meals. By healthy, I just mean there's real, good food involved, not that it follows a diet plan. You don't need to say specifically lunch, it can also be supper or breakfast, but I intend it to be somewhere is the middle of the preparation scale (More time than cereal and milk, but less time than chicken and rice-unless it's leftovers).
Today I have pasta: whole wheat pasta, broiled salmon, frozen basil dissolved in olive oil, sundried tomatoes, garlic salt.
And I already prepared it in the fridge, so that I only eat the amount that I have.

It does taste fancy, but it's so fast to make if all the ingredients are available!
The biggest problem now is trying to make a couple more hours before I eat it...

Today I'm having deviled eggs (with only the tiniest bit of mayo- though I'm sure plenty of people here will say that's poison and disqualifies my lunch from being healthy...), watermelon, and roasted veggies.

Breakfast was overnight oats:
1/2 c oats
1/2 c almond milk
2 tablespoons peanut powder
3/4 cup plain Greek yogurt
1 tablespoon optional add in (nuts, raisins, chocolate chip)
Mix it all and refrigerate overnight.
Lunch was chicken pepper stir fry (leftovers from Shabbat) with lettuce, tahini, and 1/2 cup of rice.
Dinner will be Yemenite foul madamas with egg and either rice or pita.

I usually have a coffee in the morning and then eat brunch later on
Yesterday was avocado toast on ww bread (ww bread with mayo/ketchup spread, sliced tomatoes, sliced avocado and shredded cheese)
Today was an acai bowl with granola and sliced banana

My dd surprised me with a strawberry banana smoothie made with Greek yogurt this morning, it was so filling!we also had a slice of rye with avocado on the side .

I just ate burger and chicken kabob.
My husband had omelette with cheese and a frozen tuna product from Costco in Canada.
We brought Shabbat leftovers but also raw to cook for next Shabbat. We have a burner and a sous vide.( on vacation)
Immediately edible food = cheese, eggs, raw tuna, home made mayo brought from home, Shabbat leftovers, sour cream ( we like better than yogurt), cottage cheese, nut butter, canned tuna, pickles, olives, home roasted nuts and hearts of palm. I actually offered to bring all the meat for dinner this coming Shabbat to my sister who is hosting us in her resort condo ( her cottage is five minutes from here.)
For Shabbat we have rib steak, lamb shoulder chops and turkey breast boneless with skin. Veg we can buy locally but tend toward chunky salad with olive oil.
We brought salt and some seasoning we make ourselves.

I sautéed onions, peppers, and tomatoes with a bit of olive oil. Added milk, 1 egg, cheese and fresh parsley. Salt and pepper to taste.
Ate with crackers on the side.
