Easy Sheet Pan Gnocchi (no need to cook it first)

A few weeks ago I was craving Gnocchi (no clue why, but I just got in the mood) but I had no patience to cook it then fry it so I went searching for an alternative. This is my new go-to supper, snack, whatever. It's easy and it's YUM!

basic recipe:
1 package gnocchi (I've used regular, mini, and cauliflower, they all work) (I've only tried the vacuum packed but the original recipe said the frozen work, too).
a bunch of whole grape or cherry tomatoes
a diced (not too small) red onion
olive oil
salt
optional add ins:
olives (we like black)
1 can chick peas
soy sauce/sweet sauce/ balsamic glaze
other spices (whatever you like)

toss everything together on a real (not disposable) sheet pan and bake at 425F for about 20 minutes, till at least some of the tomatoes bust. mix it together and enjoy!

First time I did it with just the basics and it was great. Since then I've experimented with some extras (see above) and they just made it even better. I've also added feta when it comes out (my oven is pareve) and I imagine it would be great with small pieces of chicken or meat roasted with it, too. You could probably add other veggies (pepper, mushrooms, etc) but I haven't tried it, yet. Don't skip the tomatoes, they create a sauce for the whole thing as they bust.
