egg free water challah
3 C flour
1/4 C sugar
1/4 C oil
1 1/4 C water
1 Tbsp. Dry yeast
Mix 3/4 C water with yeast and 1 Tbsp sugar.
in a Separate bowl, mix all dry ingredients, form a well in the dry ingredients and add yeast mixture and oil, begin kneading add the rest of the water slowly as needed.
Allow dough to rise 1 hour, or till doubled in size. Braid and place in a challah pan, bake at 350 till golden brown.
If you want you can glaze the top with a bit of egg yolk.
this recipe yields 1 loaf. I usually quintuple it and make 6 loaves.

Yeah Greeny and Mommy!
I was looking for a real water challah...the one in my cookbook has 2 eggs.
dh loves his mother's challah without a single egg (except on the top for a glaze.) looking forward to trying this iy'h next week!

Thank you, thank you, thank you! We're into egg challah ourselves, but we have strict vegan friends (forget the egg glaze, baby, makes the challah totally tref for them). I could give them matzah or pitta but it's nicer to make something that everyone at the table will eat.
Two questions: have you tried it with whole wheat and if so does that work well, and
it sounds like an awful lot of sugar. Does it taste sweet?

This is very similar to my water challah -
the sugar is not too much, IMO and it necesasry b/c usually egg adds a certain sweetness and here there is nothing to 'blend' the flaovrs.
I've made mine with both whole wheat and spelt - I usually do 1/2 sugar and 1/2 honey for those b/c the honey adds a little more moisture to those 'harder' grains

MM's Water Challah:
5 lbs. WW flour
5 Tbsp. dry active yeast or 2 oz. fresh
1 Tbsp. salt
18 Tbsp. sugar/honey + 1tsp. sugar
6-7 c. warm water
1/4 c. oil
mix yeast with 1 tsp. sugar and 1/2-2/3 c. warm water
let activate
in a large bowl mix all dry ingredients
make a well in the middle
add yeast mix, honey (if using) and 5.5 c. water
stir then knead as dough forms
add water as nec. (you should still have 1 c. in reserve)
When dough has formed, add oil and knead lightly
Cover and let rise 1-2hours
Punch down and let rise another 1/2 hour
Form/Braid and bake (you can also form/braid then let it rise another 1/2 hour)
Bake in greased pans at 350 for 30-40 min. or until if make a hollow sound when tapped on the underside
Great egg fre glaze: whisk a little oil, honey and vanilla then baste over challos - gives a beautiful shine and a nice hint of sweetness to the crust

yeah I have new vegans in my house ... so ... no sugar (unless natural) and no eggs even for glaze (which I never do anyways) ...
so you think the whole wheat flour will work for this ...
I tend to modify recipes - so I will see what I will make as I start baking it ... I'll let ya know later ...

my water challah is also egg-free! When I make it for my neighbor, I don't brush the top. But for us I do.
2 Tbsp. dry yeast
1 c. sugar
1 c. warm water
mix. let bubble. add:
½ c. oil
3 c. water
1 Tbsp. salt
12-14 c. flour
rise
preheat oven to 200 degrees
shape
no 2nd rising!
brush with egg (optional)
put challas in oven, close door, and turn off! for 10 minutes.
without opening oven, turn oven back on to 350 degrees for 35-45 minutes.

the original recipe calls for 2 tbsp. I like it with a 1/4 cup. Its not sweet, feel free to use less if you like it with less sugar. I have basically played around with it till we liked it.
