Do you eat the egg from the seder plate?

DH came home reporting that he learned you're supposed to eat the egg at the seder. B'H he found this out after the second seder, because I think eating an egg that's been sitting out for hours is kinda gross. Wondering what the origin of this is, and if people actually eat it?

Yes we eat it at the beginning of shulchan aruch. (After matzah and maror etc)
We dip it in salt water and some have the minhag to take the whole thing at once into their mouth.

We eat it the next day.
An egg doesn't become gross from sitting out unpeeled for afew hours.

I Don’t. After hard cooking I roast it on the fires and it gets rubbery at best if not outright burnt.
