It's called wheat gluten (I think)...you add it to make the challah soft.

When I make braided challahs with six strands, I need an entire batch to make it (that's probably because I'm not so good at it).
When I make pull-apart challahs or three-strand braids, I can get two out of it.

1 1/2 c. warm water
1/2-3/4 c. oil
3 eggs
few squeezes of honey
1 tsp. salt
1/2-1 c. sugar
6-7 c. whole wheat flour (I used to use mostly reg. ww with a bit of white bread flour, now I use all White Whole Wheat flour)
2 Tbsp. yeast
I always get major compliments on this. Makes 2 large or 1 large and 2 small.

Sorry! There is also some honey in my recipe (I don't use it since the applesauce sweetens it enough for me).
About a tablespoon, I think. I also just eyeball that.
