I have a lot left over from supper. I’d love to use it and then freeze. Is that possible or will it be not yum?
Side note- really need an easy sweet noodle kugel!

Penne is not a good shape for kugel. It's designed to hold sauce, not to be compacted into a pudding. Also, be aware that pasta is not the same as egg noodles and it's stiffer and harder to cut than lokshen. Will penne cooked into a lokshen kugel recipe be edible? Yes. Will it be good? Certainly not as good as a traditional kugel made with egg noodles. If the alternative is to throw the pasta out, by all means try it.
