My sons birthday is today and I haven’t had a chance to bake anything, he doesn’t like bakery cakes. Any ideas for something one bowl quick and easy?

If your son likes chocolate this one bowl, no mixer cake and always comes out moist and yummy:

Hershey's 'Perfectly Chocolate' Chocolate Cake
2 cups sugar
1-3/4 cups flour
3/4 cup cocoa
1-1/2 tsp baking powder
1-1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup Parve milk (soy milk, rice milk, almond milk... non-dairy creamer or juice works too)
1/2 cup oil
2 tsp vanilla extract
1 cup boiling water

Heat oven to 350°F. Grease and flour 2 (9") round baking pans. [Or 1 (9x13) pan.]
Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on by hand, or on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
Frost and layer the two round cakes. [Or just frost the one cake.] Also works in a 9x13" pan or 18 cupcakes.

I see we cross-posted. Great minds think alike!
I just wanted to add that a 9x13 cake needs longer (40-45 minutes) to bake while cupcakes need shorter (about 25 minutes).

Thank you, this looks perfect!

Be aware - as per directions it’s a very thin batter once you put in the hot water vDon’t let that throw you off
