I once saw a Pesach recipe that used a Tapioca gel as a binder instead of eggs. I think it was Tapioca starch boiled with a specific amount of water. Unfortunately I couldn't find the recipe or the technique the next year, but maybe sometime with better googling skills can find it.

If I was hosting a vegan family for pesach, I'd skip the kugels and cakes. Just serve salads, cooked veggies, roasted potatoes/sweet potatoes or quinoa as side dishes. Dessert is fresh fruit/melon, baked apples with cinnamon, dried fruit and nuts, mints, or sorbet.

Otherwise, you are going to work so hard making food that is mediocre at best. Just keep it simple and it will all turn out delicious.

Flax seeds are an old-school vegan egg substitute. Grind up ~1 TB ( or use already ground) and mix with a few TB of water until frothy. Then add to recipe .

It works better in some recipes than others so I’d try it out first before making for company.

Agar agar powder may be worth looking into. I think it's KLP even without certification according to CRC (chicago), but obvs AYLOR.

Can you make a test cake with the same ingredients +ground flax before pesach?

And if it turns out ok make another one during pesach?

Unless I’m missing some reason that’s not feasible.

I eat almost exclusively plant based for health reasons . In my experience , flex egg is a good substitute for cakes , I don’t feel any difference from using eggs (one flex egg = one tbsp ground flex seeds dissolved in one tbsp water , subs one to one with eggs ); it does not however work well in kugels, I would drop the kugel all together and sub with roasted vegetables.
According to CRC , flex seeds are not kitniyot but do require Pesach hetcher

Unfortunately, most pesach recipes rely on the whipped egg for rise which fakes rarely emulate well.
Look for vegan gluten free recipes and you may find something. Maybe egg free almond flour cookies?

Pereg sells OU-P certified chia seeds. You can use as egg replacement.

1 tbsp chia seeds plus 2.5 tbsp water. Stir and let thicken 5 minutes. Good for cookies and muffins (doesn't work for cake).
