I'm making quinoa with tonz of roasted vegetables mixed in for RH. It's so time consuming I was wondering if I can double the batch and freeze for sukkos.
Will it be mushy and gross?

I would. Quinoa freezes well. But not sure how the veggies inside would be defrosted
