I just do basics
Fish
Chicken soup
Chicken farfel tzimmes
Apple kugel if want extra

Bought challah and dips and dessert
Remember simanim and honey

First day meal is fish egg chulent

Second night same as first
Second day soup meat potatoes salad dessert

What's your idea of health? I cook very healthfully and fairly simply. No refined sugars or oils. Whole and unprocessed ingredients. Minimal grains, focus on proteins, vegetables and healthy fats. Is this what you're looking for?

Roasted veggies instead of kugel. Fresh fruit, like melon, instead of cake. I’m making very simple meals including simple chicken and meat dishes with roasted potatoes, roasted broccoli and cauliflower, Carrots. Beets/vacuum sealed. Simple salads all fresh. Chicken soup with so much vegetables. All fast, easy and healthy.

Whole baked butternut squash, cut in half, with brown sugar, cinnamon and orange juice
Broccoli

For super simple:

Main: Chicken with salt, pepper, garlic powder, onion powder, lemon juice (and white wine if you want to be fancy), and olive oil on top. Bake.
OR fish baked with orange slices

Vegetable side: Acorn squash. Cut in half. Drizzle olive oil or honey. Can also fill with dates and some oats if you’re feeling ambitious. Roast until soft. Looks beautiful.
OR roasted small bell peppers. (Like from the bag with the different colors, roast whole with olive oil, salt, and pepper)

Starch sides: Quinoa with apples, pomegranate if you have around, and dressing with honey and apple cider vinegar and olive oil and salt and pepper
OR
Whole wheat pasta with sautéed cabbage (you can just use bag of coleslaw) and salt and pepper

Dessert: chop up equal parts Granny Smith and your favorite red apple. Mix with a bit of flour, lemon juice, 3T water and cinnamon. Oats and flour and some honey and oil and sprinkle on top. Bake until soft.

I do same for two nights and both days usually.

Challa
Oven broiled salmon (oil and spices)
No gefilta
Homemade olive dip
Chicken soup (lots of veggies)
Potato kugel
Baked chicken bottoms
Or
Silam coated meat
Apple pie (gluten free from kosher.com)
Compote

Day meals this year is eggs and cholent day one
And chicken cutlet strips sautéed in onioms and mushrooms and broccoli as well as cooked cut up cubed beets on side.

We fill up on chickem or veggie soup

Gefilte fish with salsa- day meal 1
Whole roasted chicken
Rice in the oven
Frozen broccoli roasted
Baked apples, make double for day 2

Salmon with spices- day meal 2
Pargayot with spices or bottled sauce
Sliced red potato, skin on, with paprika etc
Roasted cauliflower with garlic salt and turmeric
Baked apples

First night meal
Simanim-boil fish head, canned carrots, canned black eyed peas add vinegrette, vaccuum beets, dates
Pickled chicken roast
Cranberry sauce
Roasted sweet potato halves
String beans sauteed
Tofutti

Night meal 2
Marinated and grilled/in a pan garlicky chicken breast
Roasted zucchini and mushrooms
Quinoa-add canned chickpeas, cucumber and tomato with lemon vinegrette
Tofutti

Here is a recipe for sugar-free apple kugel that I found on kosher.com. I usually divide the recipe by 1/3. It is a fave in my family!

4 pounds apples (about 12), peeled, cored, and halved
Ground Cinnamon, for sprinkling
6 large eggs
pinch of salt
1 and 1/2 cups Honey
1 cup oil
2 teaspoons Pure Vanilla Extract
1/2 teaspoon baking soda
4 cups almond flour
1/2 cup ground walnuts, plus 1/4 cup extra for sprinkling

Preheat oven to 325 degrees Fahrenheit. Grease a 10- by 16- by two-inch disposable foil baking pan.
Cut apples into 1/4-inch-thick slices and spread evenly in prepared pan. Sprinkle apples with cinnamon.
In the bowl of an electric mixer, beat eggs with salt on high speed until light and fluffy. Gradually add honey and continue beating on high speed for another three minutes. Add oil and vanilla extract and mix until well blended. Gently fold in baking soda, almond flour, and 1/2 cup ground walnuts. Mix briefly to combine.
Pour batter evenly over apples. Sprinkle remaining walnuts on top.
Bake uncovered for one and a half hours. When done, the top of the kugel will spring back when lightly touched with your fingertips. Serve hot or cold.

Friday night

challah
Simanim
salmon - olive oil with montreal steak seasoning on top, baked in oven
chicken soup with chicken
(No main cuz no one ends up eating it here)

Shabbos
challah
eggs
liver
lettuce salad made on shabbos, dressing oil, honey, mustard, salt and pepper
cholent

second night
same as first night

Sunday

challah
French roast - cooked in a pot of water with spices. I stopped make the sauce for it because my kids prefer it without.
baked breaded chicken cutlets for the people who don't like meat
bag of frozen chopped broccoli baked on yt with oil and salt
potato kugel-this is not very easy and not particularly healthy. You can do spiced baby potatoes in the oven instead.
