We've been using this scale in a different color (purchased in '18, I don't think any of the colors were available then):

I like to weigh the dough in grams, it's more precise...

I have a standard size.
I take off a chunk, weigh, and adjust if needed. After all balls are made, 6 balls, I cut in into 6 pieces and weigh each, also standard. I then roll into strands and braid. And go onto next ball.

Bought mine many years ago don't even remember where. It's a very standard item. Type in food scale on Amazon. Any 1 will do.
