We share one one for each gender.
Its mostly done for the minhag, chinuch

Grew up, 1 chicken for more than one kid. Got married and started doing 1 chicken per kid.

Used to do separate ones for everyone but it got too expensive so we now get one of each gender and share.

Bring a box, put all three in a box and it's much easier to hold
