doesnt need to be kneaded like regular flour cos weaker gluten?

shouldnt let rise to double cos weaker gluten?

and then advice on the opposite?

I do a regular recipe using spelt and honey instead of wheat and sugar

I treat it like regular flour and it comes out perfect. For baking challah and cakes and anything else.

I wonder if its real spelt or hybridized cos its meant to be diff than reg wheat.

I have a challah recipe you can interchange the regular flour for white spelt.
I knead them both the same and let them both rise a lot with punching down if I'm too busy to start plaiting.

I have an 80% whole wheat recipe for rolls which uses honey and its very sticky and says just knead a bit.

I wonder if it depends on white / 80% or 100%

The brand "Grain Brain " has a great recipe printed on their Spelt white flour bag. I
also tried the recipe printed on the organic bag but found the regular spelt better for challah.

can someone post the recipe here?
also wondering if need to add more liquid to recipe when making spelt muffins/cake using recipe meant for wheat?

I use all my favorite wheat challa recipes with white spelt flour. If anything it needs a little less liquid - like 1/4 cup less. Worst comes to worst, add as needed.
