Dark chicken isn't from the breast of the chicken, it's the bottom deboned. It's also referred to as pargiyot or baby chicken.
I make the grilled chicken schnitzel from dinner done with them. U can really put any sauce on it and bake it for like 35 min. I sometimes marinade the chicken in teriyaki, honey, oil and garlic. U can also do any spice mix (shwarma).

So just cover in sauce and bake for 35 minutes? 350? Uncovered?

1 pkg chicken pargiot or schnitzel
1/2 cup soy sauce
1/4 cup honey
2 cloves garlic minced (or 2 cubes or some powder)
1 cube ginger (or fresh minced or powder)
1 tbsp sesame oil
1 tbsp rice vinegar (optional if you don't have skip)
Salt if needed, depends on soy sauce brand
Mix all and marinated chicken.
Grill or bake in oven.

Simplest recipe I do is both quick and easy. Coat with a very thin coating of mayonnaise. Lay out in baking dish. Season just the top side with salt and any seasonings you like. I personally don’t like pepper or dried herbs on it, but I like garlic powder, onion powder, cumin - u can mix things up and experiment. I also love to put a generous coating of nutritional yeast flakes (top side only) - delicious! Bake 350 for approx 15 min. Sometimes up to 20 min if thicker. Don’t overbake - will dry it out.

Marinate in oil + spices

Place on a real baking sheet. Bake it on 425 for 15 min (uncovered) flip and bake an additional 10-15 min.

Delicious!!! Add onions and cubed potatoes on the pan (make sure the chicken is on the sheet directly) and it’s a one sheet pan dinner

Thank you this looks pretty simple! Bake uncovered?

Lay out flat on sheet pan, cover with your fave sauce, bake uncovered at 425 for 28 min.

28 minutes won't dry it out? Other ima said 350 15-20 minutes...

15-20 minutes seems like way too little for dark cutlets IMHO.

My dark chicken cutlets are full pieces of chicken leg (full quarter) without bones or skin. Doesn't dry it out, at 28 min it's very juicy.
At 350 for 15 minutes the dark chicken doesn't cook through.

I do either the gefen cubes of parsley garlic and lemon, with a bit of oil and honey or a mixture of oil, maple syrup, coconut aminos, some garlic cubes and a ginger cube. Bake uncovered at 425 for about 45 minutes.

I do 350 covered for 45 min. (I like very moist and well done, does not get dried out at all)
Oil, onion powder, garlic powder, pepper, salt, and paprika.
