Does anyone know why none of their premade chulents are made with potatoes?

Dh stopped using potatoes too a couple of years ago. It's a matter of preference and determined by the chef.
I also noticed another caterer also does beans barley and meat. Must rewarm better/stay on the warmer for longer with texture staying the same.
