What is the recipe for the iced coffee that you see by melave malka?

This is a great one! take a new bottle of milk. Pour out a cup of milk from the bottle. Then in a bowl you dissolve two tablespoons of coffee in one quarter cup of hot water add a half cup sugar. A scoop of vanilla and some chocolate syrup. Then pour that into the milk bottle and shake it up. Freeze until slushy.

Do I have to use vanilla ice cream? Also I see some that call for vanilla or chocolate pudding. Could I use that instead of ice cream?

Here’s a recipe I use. Simple and really good.
1 bottle of milk, half gallon preferably red
3 full tablespoons coffee
5 tablespoons sugar
1 tablespoon vanilla sugar
Pour out a cup of milk and set aside. Dilute ingredients in a cup/bowl with hot water. Mix well then pour into the milk bottle. After tasting, lol, pour the cup of milk back into the bottle.

1 bottle of milk
3 tbsp coffee
3 tbsp chocolate syrup
3 tbsp sugar
1 vanilla sugar
Dilute everything in a bit of hot water & mix well with milk.

She means a tablespoon of vanilla sugar

Yes, that’s what I meant. Not ice cream. It’s not necessary though, you can skip it altogether.

It takes a few minutes. I wouldn't take a chance. Defrosted milk doesn't taste the same!
