Anon bec I've been telling a lot of ppl (original thread under salads,maybe I will link latet).
I actually figured out s/t similar.
1. I put my oven on 510 but it may be a bit off so maybe its 475
2. Always use a real metal pan! I line mine w/ parchment. The difference is huge & you might never go back to disposable except in dire emergency!
3. I bake 10-12 min then move to top rack & broil 3-5 min.
So yeah, none of that "carefully flip each piece"
Also a tip from Rory Weisberg. You'll probably never get all your pieces perfectly even plus different parts of oven are hotter. So check part-way & if some pieces are getting too well done, take those out. (That should be kind of intuitive but after decades of cooking it was news to me!)
