DS 5 said yesterday he wants to be Kohen HaGadol when he grows up.

We're not Kohanim.

Would you say something or just "oh, that's great, good luck!"?

If he doesn't know about kohanim and israelim I wouldn't burst his bubble yet!

I'd say "Wow you would be an amazing kohen gadol. Do you want to dress up as a kohen gadol for Purim?!"
