I have a few packs that I want to use up before Pesach but I don't love how they taste. Any ideas of what to do with them to make them more exciting?

I think the toppings would be what makes them better.
For example, sautéed onions, good pickle slices,
High quality bun of some kind. The bakery near me has delicious small onion rolls for example.
This is an example of a doctored mayo based sauce if you like that
2 tablespoons rice wine vinegar
1½ teaspoons sesame oil
2 teaspoons granulated sugar
½ cup mayonnaise
2 teaspoons sriracha sauce
Here is a variant which I used to make an Asian flavored chicken salad - delicious for sandwiches
½ cup mayonnaise
5 tablespoons rice vinegar
2 tablespoons sugar
2 tablespoons sesame oil
1 tablespoon soy sauce
¼ teaspoon garlic powder
“Combine all ingredients in a medium bowl and mix with an electric mixer until well-blended and sugar is dissolved. Chill.

I would add a special sauce or spicy mayo and sauteed onions. Yum
