What to do with leftover matzah?

I have tons of leftover round shmurah matzah. Any desserts I can make with it?

Grind it into cake meal. Honestly we just eat it like crackers so yum

Eat with egg salad at shabbos meals.
Ground into matzah meal and male matzah balls.
Those are really the best ways to eat matzah in my home.

No way I'd willingly eat shmurah Matzah when it's not Pesach anymore. Kills my stomach.
Why don't you just save it for next year? It tastes stale to begin with, so if you wrap it up in plastic gallon bags, it will taste pretty much the same a year later.

We save shmurah matzah from year to year - never had any issue. Put into garbage bags and store at room temperature. The afternoon of erev pesach next year, take it out of the box and put it on a cookie sheet in the oven at 225 for a few hours. Will be delicious come the seder and noone will ever know
