I have been making corn beef forever and sometimes it comes out soft and delicious, and sometimes not. Whats the trick??? Here is what I usually do:
Boil corn beef for 2-3 hours.
Make sauce.
Bake in oven with sauce for another hour or so.
Is there a reason why my meat is such a Mazal?? Can anyone help me out on this one?? I have a corn beef I am about to put up for YT (yes, you are all invited, I always have the freshest food ! LOL)

I know but even when I buy the same meat it never comes out the same... seems to be only the corn beef that I have this problem with

Whenever I make corn beef I boil for an hour and a half switch the water turn the corn beed over and boil for another hour and a half.
I make the sauce right before the meal then warm up the meat with the sauce for like half hour or until we are ready to eat it. It comes out soft and delicious....

If its a big cut of meat then maybe you should double the sauce, especially if you are baking it for an hour. I don't think it needs to bake for that long. And bake it covered.
