Could you have them draw an opposites picture? That is more subtle perhaps than anything direct but for instance, have them take a piece of paper, divide it into two and draw a design in various colors on one side and the opposite color (yellow=purple, blue=red) though same design on the other.

Decorate soup bowls (on the outside) purchase cheap clear or white bowls and have them add on decorations with super glue or the glue gun.

Have them make charts with the characteristics of Esauv and Yaakov but instead of writing drawing, or pasting cutout pics (from magazines etc.) of their character traits. Seal and hang on a string for a wall hanging.

Have them convey the idea of the blessing figuratively. Let them decide what that means (they can do a picture of the Torah on top of hunting gear for instance, or they can show the crown of torah surrounding tons of fruits and veggies and animals, showing the physical and the spiritual blessing. They can show a man studying Torah and light coming off him etc. etc. But let their ideas be their guides, they only need to explain it to you. They can do something totally abstract, but again they need to explain it to you.

Go comic; have them draw a comic strip illustrating one aspect of the Parsha.

Ask them for ideas. Really they may have some good ones!
A lot depends on how much money you have to spend.
