Does anyone know of a good salad to make with chinese cabbage? (The light green cabbage that is crinkly and soft, with oval shaped leaves, not regular cabbage)
I once had a good one with peanut dressing, tiny bits of cut up apple and celery and maybe even peanuts.
Ne ideas anyone? I'd love to make it for Purim seudah!

Ingredients:
• 1 (3 ounce) Package ramen noodles, crushed
• 10 Ounces cashewnut pieces
• 1 (16 ounce) Package shredded coleslaw mix or
5 cups Finely shredded cabbage
• 1 Bunch green onions, chopped
• 1/2 Cup white sugar
• 1/2 Cup vegetable oil
• 1/4 Cup cider vinegar
• 1 tbsp Soy sauce
How to make Chinese Cabbage Salad:
• In a preheated 350 degree F oven, toast the crushed noodles and nuts until golden brown.
• In a large bowl, combine the coleslaw, green onions, toasted ramen noodles and cashews.
• Prepare dressing, by whisking together the sugar, oil, vinegar and soy sauce.
• Pour the dressing over the salad, toss and serve.
• Chinese Cabbage Salad is ready

Chinese (Napa) Cabbage - this is a beautiful appetizer
1 hard egg
2 Tablepoons oil
2 Tablespoons cider vinegar
1 pimento, cut up (sometimes it was hard to find kosher so I used jarred red peppers)
2 Tablespoons chopped parsley
1 onion, sliced and minced
1/2 teaspoon salt
1/8 teaspoon pepper
(I usually double the recipe because it's so good over the cabbage)
Chop egg and add remaining ingredients. Mix well and pour over plated, sliced (like a steak) Chinese cabbage.
Or, just pour over sliced Chinese cabbage. Toss lightly and serve at once.

Tamiri, do I understand correctly that you chop the egg (not mash) and then add the rest of the ingredients?
For both of these recipes, is apple cider vinegar or regular vinegar ok?

For both of these recipes, is apple cider vinegar or regular vinegar ok? | Oops, never saw this beore. You chop the egg to get little squares, like diced and then mix that into the marinade. I imagine any vingefar is fine but apple tastes better than regular.
What you get is a pretty disc of chinese cabbage on your plate, with colorful and multi textured marinade decorating it on top. I have not made this for years and my mouth is watering from thinking about it. Yum. It's KFP too.
