What can I make with ground nuts leftover from Pesach? I have a lot and would like to use at least some of them while they're still good. I think I have ground walnuts and ground hazelnuts.

cake?

I made some delicious nut "breaded" salmon with ground almonds, and for shavuous, I ate some delicious pecan "breaded" salmon a friend made. So yummy!

Walnuts can be a little bitter (not sure about hazelnuts). I have found I don't much like them alone as a "breading".

You can substitute up to 1/2 cup ground nuts in standard cookie dough or cake recipe.
You can also add 3-4 tbsp ground nuts to gefilte fish mix.
Or use in kugel recipes (esp nice in broccoli or noodle recipes).

I enjoyed a dish of stewed chicken in creamy gravy made of curry powder, fried onion thickened with ground walnuts, though I don't know what it's called or recipe for it.

Ground hazelnuts -- terrific! You can make truffles, and mix in some, or roll them in the hazelnuts. Or, you can mix with crushed graham crackers for a delicious crust for pie or cheesecake. They're good for nut cakes, if you have enough, or nut cookies. They can sub in for almonds or whatever. I love them.

I also bought too much for Pesach.

You can add to almost any cake or cookies.

I have an orange-kiss-me cake recipe that uses a cup.

Mandelbrod uses up a cup.

You can sprinkle it on yogurt. My two and a half year old who is very set in his ways likes wheat germ on his yogurt. On pesach, we discovered "pesachdik wheat germ" Vanilla yogurt with cinnamon and nuts. YUM!

If you keep it in the fridge it will stay fresh longer. I make a delicious sandwich cake using ground nuts.

Roll out ready bought Flaky Dough.
Smear apricot jam.
Spread nuts.

Option 1: Make tiny ruggeluch
Option 2: Roll into swiss roll fashion and cut circles

Bake for aprox 15 mins. Check! Each oven is different!

Sprinkle confectionar's sugar!

Grumble them down LOL
