Baked Blintze Loaf

Great for the 9 days! I serve it with soup and it's a meal.

Batter:
1/2 c. margarine, melted (I used oil)
2 eggs
1 t. baking powder
3 T. sugar
3/4 c. milk
1 1/4 c. flour

Filling:
16 oz. cottage cheese (no salt added)
2 T. margarine (or oil)
1 egg
1 T. sour cream
1 t. salt
1 T. sugar
4 oz. cream cheese, softened

Mix batter ingredients. Pour half of batter in loaf pan. (I use a large loaf pan and spray it first with Pam.)
Mix filling ingredients and pour over batter in pan. Top with rest of batter (you can sprinkle the top with cinnamon-sugar if you'd like.) Bake for 1 hour and cool for 10 minutes. Slice and serve with applesauce or sour cream.

quick and kosher also has a delicious recipe for this that my kids love!!!!

I recently made the potato knishes (I made it in a loaf) from the spice and spirit cookbook. that was yum, too. though it was a patchke. And don't put as much pepper as the recipe says you should, unless you want to burn your mouth out. learned the hard way....

Yes, we like the one from Quick and Kosher too, but that one uses frozen packaged blintzes, so it's a bit of a different taste.
