unless we eat supper after 10:30 we can eat meat. I already made a meat supper...one of my freezers got unplugged so I had to use up some meat.

Dairy/pareve. We do that almost every night. DH does not like fleishig. So, the 9 days are no big deal for me.
Actually, I told him maybe we would have meat every night during the 9 days. it would give him good reason for mourning!

Thanks for reminding me. Better defrost meat!!!
BTW, what do you do with the leftovers? Give to the kids/save for shabbat/freeze?

We had curried chicken chunks. No leftovers - I never make enough meat to have any left over, unless I'm planning to freeze part of it for another meal.

Here's the recipe I follow: http://www.epicurious.com/reci.....04122
My adaptations: I use less chicken, soy sauce instead of fish sauce and less or no red pepper - but that's because I'm not a great fan of heat. You can sub lemon juice for the lemon grass, but lemon grass gives a much more delicate and subtle flavor and I try to use it when I can. I also usually throw in some frozen peas so I get a vegetable in that maybe someone will eat by mistake.
(I make my own coconut milk, btw. I cook up a half-cup coconut in a cup of water and let simmer a few minutes, then drain the water off through cheesecloth and discard the coconut.)
Oh, and I don't bother with the cilantro.

wow, im the first to write that we had dairy last night. when we ate supper it was already after shkiah, so we figured that the 9 days had already started, but it was ok. I made a BIG lasagna and so we have enough for tonight as well. I LOVE dairy !!!
